Super Salad Recipe

Here’s a few of my favourite power foods. Can eat a huge bowl of it every morning. Try it!!

  • Spinach
Superb source of iron, calcium, folate and vitamin K. The leafy greens are a low-calorie, non-fat alternative to red meat.
  • Broccoli
Use 1/2 cup of these in your salad to get as much vitamin C from an orange, but half calories. And also, you get 40mg of calcium minus the fat which you normally get from a cup of milk
  • Grapes
Rich in flavonoids and protects blood vessels and heart muscle from tissue damage caused by free radicals. Deliciously sweet and refreshing.
  • Olive oil
How to go without olive oil? Composed mostly of monounsaturated fat, olive oil lowers LDL cholesterol as well as blood fats called triglycerides. Also reduces the risk of high blood pressure and inflammation. Packed with vitamin E and carotenoids. I use extra-virgin olive oil for a richer antioxidant phytonutrients.
  • Strawberries
Gordon loves strawberries. 1/2 cup contains only 25 - 30 calories and minimises damge from LDL cholesterol. And also reduces inflammation in the arteries. Helps protect against cancer.
