Tomatoes

Tomatoes are rich in vitamin C, vitamin A, iron and potassium. The red pigment which gives tomatoes it’s color is known as lycopene. It’s a compound which acts as an antioxidant. regular servings of tomatoes can reduce the risk of developing cancer in the prostate, rectal and stomach. Lycopene is also a powerful inhibitor of lung, breast and endometrial cancer cells.

The good news is tomatoes do not lose its nutritional value at high heat making it suitable for cooking as well as eaten fresh. You can slice the fruit to make sandwiches and chop it up and toss in salads. For homemade spaghetti sauce, cook it with herbs, onion and garlic.
